You've created a great series of polls about what WDW Resorts are best for adults. Bravo!

I would have voted for Port Orleans French Quarter for its cute recreation of the Vieux Carre (French Quarter) of New Orleans -- the part that people don't immediately think of when they think "French Quarter," that it is a living, vibrant community -- a residential neighborhood. Even though the serpent slide can get noisy because it is a favorite with the kids, there is still a beautiful hot tub far enough away from that part of the pool area to make it relaxing for adults (plus it gets my vote as the hottest hot tub in all of WDW).
So, why didn't I vote for it? Because Bon Famille, the POFQ restaurant is no longer open. While there is a jazz club still there and a food court, I think adults need a great restaurant at the resort.
My vote, then, goes to my second choice: Port Orleans Riverside. The bayou village lodgings as well as the mansion-style lodgings lend an air of peacefulness after a buy day in the parks. The room decor is pleasing to adults, even elegant if you are in the mansion area. There is a large liquor-serving lounge complete with entertainment as well as Boatwrights for a great meal (in addition to the food court). The way that the lobby and its entrance area are themed is very appealing to adults as well.
